Okay, a few questions:

1. Durum flour = rava?

2. All-purpose flour = maida?

What do I subsitute for applesauce and molasses? I don't want to use oil/ butter/ margarine
Durum flour is regular atta used to make chapatis. AP flour is maida. Instead of molasses, you can use 1/4 cup brown sugar+ 1/4 cup milk/buttermilk. Or, just use 1/4 cup honey.

There are only two fat substitutes I know of..applesauce and prune puree. ( If you puree prunes (munakka), you can completely skip the molasses. ) You can also make your own applesauce. Just cook some sweet, peeled and chopped apples in some water and then run them through a sieve. Details here.

I know what you're thinking, but getting rid of the fat is never easy. (Unless you can find applesauce in the baby food section of the market.) Isa also says to add about a tablespoon of oil, for texture. ( I didn't, but it will make your muffins even better.)
